Mexican Tacos with Guacamole & Salsa
If you're anything like me, one of the things I missed most when turning vegan was Mexican burritos and tacos. Now you can easily create your own Mexican dishes at home with this simple vegan recipe that includes homemade guacamole and salsa. The best part is it only takes 20 minutes to make!
- 1 cup soya mince
- 1 large can of chopped tomatoes (or passata)
- 2 tsp cumin
- 2 tsp smoked paprika
- 1 tsp chilli powder
- 3 cloves of garlic (minced)
- 1/2 red pepper
- 1/2 yellow or orange pepper
- 6-8 soft or hard taco shells
- 2 avocados
- 1/2 a lemon
- 1 tsp lime juice
- 2 onions
- fresh coriander (chopped)
- 1 large tomato
- 1/2 can of kidney beans or black beans
Finely chop the onions and tomato, you'll use these for the taco meat and also the guacamole and salsa.
To prepare the guacamole: mash two ripe avocados in a bowl, add in a generous helping of chopped onion and 1/2 chopped tomato then squeeze the juice of half a lemon over the top, add a pinch of salt then stir and set aside.
To make the salsa: blend the can of tomatoes in a smoothie maker or blender then add 1/4 of the sauce to a small salsa bowl. Add a helping of onion and the other 1/2 chopped tomato then set aside.
Chop the peppers into thin strips, mince the garlic cloves and rinse and drain the beans.
Preheat a pan on medium heat with a drop of olive oil and preheat the oven to 100c.
When the pan has heated, add the remaining chopped onions and fry for 2-3 minutes or until soft, then add the garlic and fry for another 1 minute until golden.
Add the peppers and fry for another 2-3 minutes. Place the taco shells in the oven to heat (according to package instructions).
Add 1 cup of soya mince and fry for 30 seconds, start adding the remainder of the tomato sauce while stirring. Keep adding the sauce until the the soya mince is properly coated and has turned red.
Sprinkle 2 tsp of cumin, 2 tsp paprika and 1 tsp chilli powder over the mixture and stir. Taste and adjust if needed. Add more cumin for flavour and chilli powder for heat.
Add 1 tsp lime juice and then cook for another 3-4 minutes while stirring, then remove from heat.
Remove taco shells from the oven and spoon the taco mixture onto them. Top with guacamole or salsa and garnish with chopped coriander. You can sprinkle some paprika (unsmoked) over the dish for decoration.
