Spicy Peanut Tempeh Sandwich
I first tried this sandwich in a vegetarian/vegan restaurant called Earth Tone in Pai – a small town in northern Thailand. I'd been missing sandwiches with a good solid filling after I became vegan so I was incredibly happy to find this!
It was so delicious I just had to replicate it when I got back to my apartment. It's super-easy to make and only takes ten minutes!
- spicy peanut sauce
- ~150g tempeh
- 2 slices of fresh sourdough (sub your favourite bread)
- handful of lettuce or spinach
- 1/2 a tomato
- 6 slices cucumber
If using frozen tempeh, soak it in a bowl of almost boiling water for 2-3 minutes to defrost and soften. Slice in half so you have two half sandwich size slabs.
Slice tomato, cucumber and grab a few leaves of lettuce, spinach or both.
Make the spicy peanut sauce using these instructions. When you reach step 8 add the tempeh and continue to cook for 4-5 minutes on a medium-low heat until the tempeh has absorbed the sauce and it's throughly cooked (stick a fork in it to test). You'll need to occasionally toss the tempeh to ensure it's evenly coated in the sauce.
While the tempeh is cooking, toast two slices of bread, then lay your lettuce, tomato and cucumber as the base.
Top with tempeh and drizzle any remaining sauce and crushed peanuts over the top, top with the second slice of bread and slice in half.
